Unfortunately it is not an option from the food providers without paying extra for a number of spare meals.

Likewise other food preferences are important to collect in advance such as allergies.

I expect we will order some extra vegetarian meals anyway, but without information from those attending we could still get the provision wrong. It seems that some people have expressed preferences that I was not aware of, so we are on our way to an informed decision.
